Foods of the Generals


The Generals (people of General Santos City) love food. In every occasion, whether a birthday party, festival, feast of a patron saint, reunion, get-together, or any other celebration, Generals do not think twice in serving good foods and hefty meals. Even on a simple beach outing, Generals spend for food. So what are the favorite foods of the Generals? Which foods are the Generals’ true delights? Here are some of these foods:

General Santos is the “Tuna Capital of the Philippines,” so the first on the list should be the tuna. What better way to serve tuna is being grilled. Locally known as “Sugba” or “Sinugba”, grilled tuna is a huge favorite of the Generals. Tuna belly and “panga” (jaw) are the best parts.


If you do not like it grilled, why not serve it raw? The “Kinilaw” or “Kilaw” is fish cooked in vinegar, preferably coconut vinegar, with onions and ginger for spice, garnished with fresh cucumbers. Other variety puts fresh radish, green mangoes, or other veggies on the “Kinilaw”.


General Santos City is blessed with bountiful shores and seas. So beside the grilled tuna, grilled sea foods are another favorite dish of the Generals. Squid and other types of fishes are the common grilled foods.



Another delectable sea food is the crab. Just a simple dish stewed crabs can water a General’s mouth.


And for the meat, let’s have everybody’s favorite – “Lechon” or roasted pig.
